Lisa Jubilee is a New York State Certified Dietician-Nutritionist, who has been counseling individuals on sustainable weight management and disease prevention for over 15 years. Her mission is to empower individuals to obtain healthy food relationships and to clearly understand the concept of food as medicine.

As a result of losing 28 pounds naturally and working in a popular weight loss center in grad school, where she observed clients repeatedly losing and regaining weight, Lisa chose to create a functional nutrition practice where what, why and how we eat are all part of the conversation. 

In 2005, Lisa co-founded Living Proof Nutrition Strength Pilates, a private nutrition, HIST (high intensity strength training) and Pilates studio, located in midtown Manhattan. 

As an advocate for mandated GM (genetically modified) food labeling, Ms. Jubilee had placed a strong emphasis on educating her clientele on the health advantages of avoiding GM foods.  In October 2015, she partnered with Green Polka Dot Box, an online 100% GMO-Free grocery buying collective, offering clean food at discounted prices.  As a result of this collaboration and the development of her new website, Lisa Jubilee Nutrition, Lisa’s dream of expanding her reach in educating and empowering communities and individuals on the power of clean eating was realized. 

Through the implementation of behavior modification techniques and addressing each client’s specific eating and lifestyle tendencies, Lisa’s clients learn new habits and routines that contribute to a healthier body composition and immune system, increased vitality and a positive self image.  Lisa tells her clients, “The most important decisions you will make for your health, are what you put on your fork, so choose well.”

She earned her Bachelor’s degree in Chemistry, Foods and Nutrition from Rutgers University and her Masters in Nutrition and Dietetics from New York University.

Jon Rothschild

One of the founders of Living Proof, Jon has more years of experience as a personal trainer than he likes to admit. Having managed to stay in shape through an earlier career that kept him chained to a desk for two decades, he later began applying the lessons learned during those years in the trenches to others.

Jon has developed and adapted a range of protocols drawn from the many conflicting theories of strength training, all of them tested thoroughly on himself before being imposed on anyone else. The effectiveness of his technique is reflected in his own condition: perhaps the oldest active trainer in New York, he is living proof that flesh need not sag as birthdays accumulate. Jon holds certifications from the American Council on Exercise (ACE) and the SuperSlow Exercise Guild.

precision as he guides them in movements leading to an ever deeper understanding of
how to approach and achieve the level of intensity needed to realize the many benefits of

Anton Thompson

Anton’s journey as a trainer began more than a quarter-century ago, when the concept of personal training was in its infancy. After a lonely ten-year stint in the upper management of The Fitness Company, his passion to instruct got the better of him. So began his career as a freelance personal trainer.

Capitalizing on his extensive background in sports (he was a college-football linebacker) and martial arts (boxing, Muay Thai, judo, Brazilian jiujitsu), he developed an approach that uses strength training not only to make the individual stronger, but also to promote healing and to proactively combat the degenerative effects of aging. He now specializes in training people 35 and older, helping them to maximize their genetic potential safely and effectively by exercising rationally, avoiding reckless abandon, and learning the art of “less is more.”

Allison Black
Allison BlackPersonal Trainer/Certified Pilates Instructor
As the only member of the Living Proof team certified in both Pilates and personal training, Allison is uniquely qualified to guide clients in their quest for stronger, leaner, better-aligned bodies.

After earning a BA in Art, Allison abandoned her native Florida for New York City for the express purpose of gaining a classical Pilates certification through Romana’s Pilates. She apprenticed under the Pilates master Sari Mejia Santo and even had the opportunity to study under Romana Kryzanowska herself. She then went on to acquire certifications from the National Academy of Sports and Medicine, the Aerobics and Fitness Association of America, and the American Heart Association.

A fitness instructor since 2004, Allison is delighted to be able to combine her specialties in high-intensity strength training and Pilates, all under one roof.

Nancy Elkes
Nancy ElkesCertified Pilates Instructor
Nancy is excited to join Living Proof as Pilates Director.

A former competitive swimmer and massage therapist, she has been teaching for 15 years. Her certifications include: Pilates Mat and Machines, Kundalini yoga, Vinyasa Yoga, Anti Gravity yoga, and TRX.

Nancy is currently studying to become a HIST Trainer here at Living Proof. Additionally, she’s worked for Crunch since 1999 and is a guest instructor at Laughing Lotus Yoga University.

Brook Notary
Brook NotaryCertified Pilates Instructor
Brook Notary holds a Masters Degree in Dance from the Tisch School of the Arts and has had the privilege of teaching Pilates for the past 14 years. She studied from the best. Brook was certified by the renowned Rael Isacowitz and also studied with master teacher Kathy Grant, a first generation student and protégé of Joseph Pilates.

Brook’s nurturing approach to teaching is very hands-on. Being a veteran professional dancer, choreographer and aerialist for the Off-Broadway hit show De La Guarda, Brook understands the body, its abilities and limitations from experience. Brook’s clients have come to her with rehabilitation issues, heart conditions, diabetes, back pain, sports injuries as well as overall body maintenance needs.

What excites Brook most, is how different every body is. She considers it an honor to make discoveries and change with every client no matter what age or skill level. Brook’s philosophy is to encourage and inspire wellness in all of her clients and she believes that there is a fine art to making change.

Loi Kail
Loi KailCertified Pilates Instructor
Loi Kail started dancing at the age of five and hasn’t quit moving since. She moved to New York after earning a BFA in Dance from the University of Michigan, danced with several companies, choreographed and performed her own work, attended the Swedish Institute, and received her license as a massage therapist. She spent several years in Germany, where she continued to dance and choreograph and was assistant to the choreographer at the Komische Oper in Berlin. Upon returning to New York she worked as a massage therapist while studying Pilates. She began teaching Pilates soon after and still teaches group mat classes at Equinox.

Loi has experience working with a wide variety of clients: pre- and post-natal, post-rehab, dancers, golfers, hip replacement and even people with nothing obviously wrong with them. She directed her own Pilates studio from 1999 until joining Living Proof in April 2007. She has continued to train her eye, mind, and body by attending workshops (Swedish Institute, Irene Dowd) and as a member of the Pilates Method Alliance.
